In Chapter 2, Raphael meets Bruno for the first time outside of Notre Dame Cathedral, where he is lamenting the loss of his head chef, who quit on his very first day at the second location of his restaurant École Militaire. He begs Raphael to help him, which leads to the minigame Rhythm Kitchen. Afterwards, he begs Raphael to become a full time chef for him.
Bruno appears in Rhythm Thief and the Paris Caper as a minor character in Chapter 6, M2. Raphael visits his restaurant when Cedric tells him that a girl matching Marie's description was seen there. Cedric tries to tell him that there is something he should know about the chef of that restaurant, but Raphael runs away before he can finish his statement.
After completing the chapter and the minigame Cookin' on Gas, Bruno compliments Raphael's cooking. He tells him that Marie left already and mentioned wanting to see a show. Raphael thanks him for the information and cooking lesson. Bruno claims that Raphael should be working for him with him rhythmical skill, but Raphael says he is in a hurry and leaves.
Bruno also appears as an accomplice in Paris Caper called "Bruno the Head Chef." He can be promoted from Bruno the Head Chef C all the way to Bruno the Head Chef A.
